Raw, unpasteurized coconut sap is used to make our premium coconut vinegar. Three phases are used to divide the manufacture of coconut vinegar. The first three are aged, filtered and fermented, and tree fermentation. From a year to two years are needed to manufacture coconut vinegar. No mother exists for our coconut vinegar.

Only the previous batch’s vinegar starter—which is 100% raw—is used in our process for making coconut vinegar. In its most basic form, the production of coconut vinegar involves fermenting coconut sap to produce ethanol, which is then transformed into coconut vinegar through oxidation.
